In Reflejos de Granadas, Alvarado honors the Granada (Pomegranate). The pomegranate holds notable significance in the history of Mexican culture and is recognizable as a key ingredient in a nationally famous dish, chiles en nogada. Resembling the colors of the Mexican flag, it consists of stuffed green poblano peppers topped with a white walnut-based cream sauce, parsley, and pomegranate seeds. Originating from Puebla, it is said that it was first prepared to entertain the future emperor Agustín de Iturbide. Thanks to this rich history, chiles en nogada are often made in the fall to celebrate Mexican Independence Day, evoking a sense of pride for the inhabitants of Puebla and the nation.
